FOOD SAFETY QUALIFICATIONS

Aroma Training Academy delivers a range of Food Safety accredited training throughout the UK from leading industry Awarding Bodies such as Highfield Awarding Body for Compliance (HABC) and Chartered Institute of Environmental Health (CIEH), with excellent pass rates, in a style designed to inspire any employee.

On the 1st January 2006 the Regulations (EC) No 852/2004 of the European Parliament on the Hygiene of Food Stuffs became Law.

Due dilligence is now the only accepted defence in a court of law for the preparation and service of food irrespective of the nature of the business and its means of processing and food distribution to the end user.

All the paperwork associated with the Act has now to be filled in regardless of excuse. Failure to do so will result in the successful prosecution of the business and individual concerned.

You must make available on each day of food production and service a responsible individual to complete the relevant due diligence paperwork.

"Food Safety Management" procedures. By law you will be required to put in place food safety management "procedures" based on the principles of Hazard Analysis Critical Control Points" (HACCP, in order to manage food safety and integrate these procedures with documentation and record keeping.

Paperwork must be at all times consistent for each day of the week including week-ends, annual holidays, national holidays, and sickness. These is no excuse accepted in the process and execution of the due diligence process for this to be carried out.

Food Business Operations obligations: You will have to ensure that all stages of production, processing and distribution of food under your control satisfy food hygiene regulations from 1st January 2006.

Obilgations to consider include:-

  • Food business operators obligations being wholly responsible for food safety.
  • Ensuring food safety throughout the food chain.
  • Maintaining the cold chain where foods can not be safely stored at ambient temperatures.

Current legislation does not say that food safety certificates are required by food handlers. However food handlers must be supervised and instructed and/or trained in food hygiene matters commensurate with their work activities. Consider the benefits of attending an Awarding Body approved training course like the Level 2 Award in Food Safety in Catering and recieve a food safety certificate. These include, for example:-

  • Setting a bench mark;
  • Provision of theoretical understanding;

  • Underpinning knowledge for NVQ qualifications;

What Awarding Bodies do you use? For the delivery of our Food Safety qualifications we use two of the biggest:-

  • Highfield Awarding Body for Compliance (HABC), and the
  • Chartered Institute of Environmental Health (CIEH)

Both are industry respected, each qualification is valued exactly the same and nationally recognised, it is purely down to personal choice which one you choose.  

"Which Food Hygiene or Food Safety training course do I need?" Is a common enquiry from our customers.

Food Hygiene (Past) of Food Safety (Current), these are interchangable and mean exactly the same thing. There are a number of options to choose from and the best place to start is to ask a few simple questions:

  • What is your job role within a food environment, or what do you plan to do?
  • Are you planning to work, in retail, catering or manuufacturing food environment.
  • What food safety experience or food safety qualification do you already have?

FOOD SAFETY COURSES 

LEVEL 1 - Is ideal for anyone involved in handling "low Risk" or wrapped foods. It is also suitable for those working in a food environment but not necessarily handling food, such as kitchen porters or mainenance operatives. LEVEL 2 – This level of qualification covers a wide range of topics and is ideally suited to those who are preparing and handling "high-risk" foods. This level has also been know as the "Basic Food Hygiene" and then it was called the "Foundation Food Hygiene" before changing in Jan 2006 to it's current name "Award in Food Safety". This level of qualification is our most popular entry level. LEVEL 3 – Kitchen supervisors will normally undertake this level, used to be referred to as the Intermediate Food Safety. This training is delivered over three days and is more in-depth, because of this it is advisable for candidates to already have a Level 2 Food Safety qualification before attending this training course.

LEVEL 4 - Owners and managers of catering businesses, and those responsible for auditing Food safety systems, need to undertake a Level 4 course.

Level 1 Award in Food Safety in Catering

Level 1 Award in Food Safety in Catering qualification focuses on the importance of food safety in the catering and hospitality sectors and provides food handlers with the knowledge of how they can contribute to product safety.

Food handlers must be supervised and instructed and/or trained in food hygiene matters commensurate with their work activities, i.e. they must be competent to produce safe food.  

Due Diligence: It is a defence to prove that a business took all reasonable precautions and all due diligence to prevent the offence, i.e. doing everything reasonably practicable to safeguard consumer health.

Before starting working for the first time food handlers need to be aware of the hazards and controls associated with food in catering operations. Particular attention is paid to the role of food handlers in preventing contamination and temperature abuse of food and the destruction of bacteria by through cooking. The importance of good personal personal hygiene, cleaning, waste management and recognising and reporting signs of pests are also stressed.

On achieving this Award candidates will be equipment with the knowledge to enable them to provide safe food and will assist the business to comply with the law.

Level 1 Award in Food Safety for Retail

Level 1 Award in Food Safety for Retail qualification focuses on the importance of Food Safety in the retail environment and provides food handling with the knowledge of how they can contribute to product safety. It is suitable for businessess supplying both open and packaged food.

Food handlers must be supervised and instructed and/or trained in food hygiene matters commensurate with their work activities, i.e. they must be competent to produce safe food.  

Due Diligence: It is a defence to prove that a business took all reasonable precautions and all due diligence to prevent the offence, i.e. doing everything reasonably practicable to safeguard consumer health. 

Before starting work for the first time food handlers need to be aware of the hazards and controls associated with food in retail operations. Particular attention is paid to stock rotation, preventing contamination, temperature control and the condition of food packaging in the retail environment. The importance of good personal hygiene, cleaning, wasste management and recognising and reporting signs of pests are also stressed.

On achieving this Award candidates will be equipped with the knowledge to enable them to provide safe food and will assist the business to comply with the law.

Level 1 Award in Food Safety for Manufacturing qualification focuses on the importance of Food Safety in manufacturing and provides food handlers with the knowledge of how they can contribute to product safety. It is suitable for both high-risk and low-risk manufacturers.

Food handlers must be supervised and instructed and/or trained in food hygiene matters commensurate with their work activities, i.e. they must be competent to produce safe food.  

Due Diligence: It is a defence to prove that a business took all reasonable precautions and all due diligence to prevent the offence, i.e. doing everything reasonably practicable to safeguard consumer health. 

Before starting work for the first time food handlers need to be aware of the hazards and controls associated with manufactured food. Particual attention is paid to, preventing contamination and temperature control. The importance of good personal hygiene, cleaning, waste management and recognising and reporting signs of pests are also stressed.

On achieving this Award candidates will be equipped with the knowledge to enable them to provide safe food and will assist the business to comply with the law.

Level 2 Award in Food Safety in Catering

Level 2 Award in Food Safety in Catering provides candidates with knowledge of the basic food safety practices that is essential in the catering industry.

This includes the hazards and risks to Food Safety presented by food operations and personnel together with cost-effective, practical control measures.

Food handlers must be supervised and instructed and/or trained in food hygiene matters commensurate with their work activities, i.e. they must be competent to produce safe food.  

Due Diligence: It is a defence to prove that a business took all reasonable precautions and all due diligence to prevent the offence, i.e. doing everything reasonably practicable to safeguard consumer health. 

This qualification is designed principally for those who are, or intend to be, food handlers working in catering. It is also appropriate for persons providing services to catering premises including pest control operators, maintenances engineers, cleaners, laundry and delivery personnel.

The achievement of the Level 2 Award in Food Safety in Catering qualification will enable learners to identify how to make changes to catering practices in order to improve the safety of catering services.

The Ofqual approved Level 2 Award in Food Safety in Catering qualification has been developed specifically for insertion onto the Qualifications and Credit Framework with full support from People 1st, the Sector Skills Council for Hospitality, Leisure, Travel and Tourism. It is therefore fully recognized by Environmental Health Practitioners, Auditors and other Enforcement Officers.

Level 2 Award in Food Safety in Catering (Refresher)

Level 2 Award in Food Safety in Catering (Refresher) qualification is designed for people who are involved with preparing food in a catering environment and are due to receive refresher training.

In addition to the fundamentals of Food Safety, candidates will gain an appreciation of the specific types of hazards, controls and monitoring associated with preparing food.

Food handlers must be supervised and instructed and/or trained in food hygiene matters commensurate with their work activities, i.e. they must be competent to produce safe food.  

Due Diligence: It is a defence to prove that a business took all reasonable precautions and all due diligence to prevent the offence, i.e. doing everything reasonably practicable to safeguard consumer health. 

This qualification is designed principally for those who are food handlers working in catering and are due to receive frefreher training. Highfield Awarding Body for Compliance (HABC) recommends that competency testing takes place at least annually, followed by short refresher sessions, to continously demonstrate the importance of working safely.

The achievement of the Level 2 Award in Food Safety in Catering qualification will enable learners to identify how to make changes to catering practices in order to improve the safety of catering services.

Food handlers achieving the HABC Level 2 Award in Food Safety in Manufacturing will have the necessary information to ensure Food Safety in any size or type of food manufacturing environment.

The qualification is designed for people who are, or intend to be involved in food or drink production. In addition to the fundamentals of food safety, candidates will gain an appreciation of the specific types of hazards, controls and monitoring associated with food manufacture.

Food handlers must be supervised and instructed and/or trained in food hygiene matters commensurate with their work activities, i.e. they must be competent to produce safe food.  

Due Diligence: It is a defence to prove that a business took all reasonable precautions and all due diligence to prevent the offence, i.e. doing everything reasonably practicable to safeguard consumer health. 

Knowledge of good personal hygiene, cleaning and waste management, pest recognition and reporting, and heat processing associated with large scale food production will also be required.

This qualification has been designed to address the difference between catering and manufacturing environments and will ensure businesses are compliant with the requirement to train food handlers to levels commensurate with their work activities.

The Ofqual approved Level 2 Award in Food Safety for Manufacturing qualification has been developed specicically for insertion onto the Qualification and Credit Framework, with full support from Improve, the Sector Skills Council for th efood and drink manufacturing industry in the UK. It is therefore full cognisant with industry and regulatory standards, as well as being recognised by Environmentalt Health Practitioners, Auditors and third party customers who need the manufacturer to demonstrate they have trained staff to a recognised level.

The aim of the Level 2 Award in Food Safety for Retail is to provide candidates with knowledge of the basic Food Safety practices which are essential in a retail environment.

The hazards and controls in this type of environment will differ from those found in catering, but are no less important.

Food handlers must be supervised and instructed and/or trained in food hygiene matters commensurate with their work activities, i.e. they must be competent to produce safe food.  

Due Diligence: It is a defence to prove that a business took all reasonable precautions and all due diligence to prevent the offence, i.e. doing everything reasonably practicable to safeguard consumer health.

The qualification is designed principally for those who work in, or intend to work in, a retail environment where both packaged and/or open foods are available. It is also appropriate for persons providing services, such as delivery drivers and home delivery employees.

The achievment of the Level 2 Award in Food Safety for Retail qualification will enable learners to identify how to make changes to practices, in order to maintain and improve the safety of food sold to the final consumer.

The Ofqual-approved Level 2 Award in Food Safety for Retail qualification has been developed specifically for insertion onto the Qualification and Credit Framework, with full support from Skillsmart Retail, the Sector Skills Council for Retail. Supervising Food Safety

Those who operate in a supervisory role in the wokplace need to be aware of their responsibilities with regard to food safety. Most food poisoning outbreaks can be traced back to a failure of those responsible for communicating and implementing hygiene standards.

This Level 3 qualification ensure that supervisors are aware of the legislation applicable to food safety and how to best communicate the required standards to employees.

 

The Level 3 Award in Supervising Food Safety in Catering provides progression from the Level 2 Award in Food Safety in Catering and is intended principally for those who are operating in a supervisory role within the catering and hospitality industry. Qualification holders will be able to take responsibility for the competency of the workplace and for identifying hazards and controls, monitoring controls and taking appropriate corrective action when necessary.
